Produced with 100% Italian milk, this is a cheese which differentiates itself for its chalky consistency and its versatilità. The name Lunatico reflects perfectly the different phases when it can be tasted, just like the moon with its lunar phases, our Lunatico changes with the length of the seasoning. After a long rest on pinewood boards, the cheese becomes more chalky towards its centre and softer towards the rind. This peculiarity makes it possible to savour unique aromas and flavours. For those who love more delicate tastes and scents, eating it just a few days after production will be ideal.
