It took us a year to reach the perfect recipe. Lunatico is moody like its name …but not bizarre. It has the taste of wisdom and time passing by: delicate a few days after production , then its flavour becomes unique and different at every phase of ageing, until it offers an unrepeatable sensation.

An intense and aromatic taste. As it ages resting on pinewood boards, it becomes more chalky at the centre and softer near the rind, offering unique aromas.

Perhaps it is truly a moody Lunatico, but it is always a surprise. It is perfect for a savoury appetizer, combined with fig or onion compote or even honey and walnuts. Also, a delicious ingredient for tasty salads or to enhance pasta or risotto. Or by itself, naturally with a glass of good red Piedmontese wine.
